We theoretically predict and experimentally observe two turbulent regimes associated with spontaneous self-organization in a weakly birefringent optical fiber: i) an irreversible thermalization leading to the emergence of a non-vanishing degree of polarization and ii) a reversible dynamics driven by phase correlations between the polarization axes.
