Cultural Identity and AI-Driven Gastronomic Entrepreneurship in Bogotá Universidad Nacional Abierta y a Distancia - UNAD - (CO), Colombia This article presents the application of knowledge acquired in the Industrial Design program and in the Food Product Architecture course as part of the academic training process at UNAD. From a social innovation and Design Thinking perspective, prototypes were developed that reinterpret traditional Colombian products such as tamal and merengón, incorporating Artificial Intelligence and 3D printing technologies. Special emphasis is placed on the Tamal Skewer, which symbolically integrates the church of Monserrate Hill at its upper section and a base inspired by the Teleférico, designed with a waste-collection function. Furthermore, the study documents the transfer of academic knowledge into real gastronomic entrepreneurship initiatives and participation in the IV and V editions of the Festival del Guarapo in Bogotá. | |
